Most food truck builders are fabricators first. John Berl became a builder because he was a food operator first. When he launched Uncle John’s BBQ, he bought a trailer in New York that quickly proved to be unreliable, poorly built, and dangerous for a growing business. Instead of letting that failure kill the dream, he rebuilt the unit from the chassis up.
That hands-on experience is why every Custom Concessions layout is optimized for real line-flow by people who have actually worked the line. Prep stations, fire suppression, ticket windows, equipment placement, and pass-through zones are positioned for the way cooks actually move during a 12-hour rush, not the way it looks on a CAD drawing.
Today, the company has completed more than 500 custom builds for successful operators and recognizable brands, including Mojo Loco, Maiale, Deerhead Hot Dogs, Ovelos Mediterranean Grille, and other regional standouts. This is not a shop guessing at what chefs need. It is a team that has lived the pressure and builds to survive it.
